Chicago Chicago was the focal point of the dairy and meat market of the United States. It was a railroad center serving all areas of the nation and was near the Great Plains. Its South Side rail yards were the site of the celebrated Chicago Stockyards, where dairy cattle were penned before shipment somewhere else. A portion of the breeds still meandered the fields openly, originally of European stock brought over by the Spanish in the 1500s.
