Why does gregorian chant sound so different from other types of western music?

Unlike most "modern" musical styles, these types of chants do not have harmony. Most Gregorian chants have one lead and no other voices backing this. Western music typically has at least one lead and a number of voices in the background providing support for the lead singer.
