Why would phospholipid heads in the cell membrane be hydrophilic? I know that makes inside and outsides of the cell membrane attracted to water, but according to google, it also means that the phospholipid heads "have a tendency to to mix with, dissolve in, or be wetted by water."

Answer:

They have molecules that has a phosphate group on an end and it is called the head. The two-two fatty chain make the lipid tail. The phosphate is negative charged and makes the hydrophilic and head polar. And then the two head are attracted to water.
